Description

A creamy and comforting Chicken Alfredo Soup featuring tender chicken, tender pasta, and a rich Alfredo-flavored broth infused with garlic and Italian seasonings. This delicious soup is quick to prepare and perfect for a satisfying meal.

Ingredients

Soup Base

  • 4 tablespoons butter
  • ½ medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Liquids

  • 4 cups chicken broth
  • 2 cups half and half

Main Ingredients

  • 8 ounces dry uncooked pasta (egg noodles recommended)
  • 2 cups cooked chicken, chopped or shredded

Cheeses

  • ½ cup grated parmesan cheese
  • ⅓ cup shredded mozzarella cheese

Garnish

  • fresh basil
  • fresh parsley

Instructions

  1. Sauté Aromatics: In a large pot over medium heat, melt 4 tablespoons of butter. Add the diced onion and minced garlic, cooking until the onions begin to soften and are fragrant, about 2-3 minutes.
  2. Make the Roux and Season: Sprinkle the flour over the softened onions and garlic, stirring constantly and cooking for 1-2 minutes to eliminate the raw flour taste. Add Italian seasoning, garlic powder, salt, and pepper, mixing well.
  3. Add Liquids: Slowly whisk in the chicken broth and half and half, ensuring no lumps form. Stir continuously to combine the mixture smoothly.
  4. Cook Pasta: Bring the soup to a boil, then add the dry pasta. Lower the heat to a simmer and cook until the pasta is al dente, following the package instructions, usually around 7-9 minutes.
  5. Add Chicken and Cheese: Stir in the cooked chicken, grated parmesan, and shredded mozzarella cheese. Continue cooking gently until the cheese melts completely, creating a creamy texture.
  6. Garnish and Serve: Remove from heat, sprinkle fresh basil and parsley on top for freshness and flavor, then ladle into bowls and serve warm.

Notes

  • Use freshly grated parmesan for best flavor.
  • Substitute half and half with heavy cream for a richer soup, or milk for a lighter version.
  • Pre-cooked rotisserie chicken works great to save time.
  • Adjust pasta cooking time based on desired pasta texture.
  • Garnish can be customized with additional herbs like thyme or oregano.
