Description

This Chicken Burrito Bowl recipe offers a vibrant and flavorful meal inspired by Mexican cuisine, featuring marinated and pan-cooked chicken breasts served over cilantro lime rice with a colorful assortment of fresh and cooked toppings including corn, refried beans, lettuce, tomato, and spicy jalapeños. Topped with cheese and sour cream, this dish is perfect for a satisfying, easy-to-make lunch or dinner that balances protein, vegetables, and bold flavors.

Ingredients

Chicken Marinade

  • 2 chicken breasts
  • 3 Tbsp. oil (divided)
  • 1 Tbsp. lime juice
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. chili powder
  • 1/4 tsp. salt

Base and Toppings

  • 1 1/2 cups cilantro lime rice (cooked rice)
  • 1 cup corn (frozen and cooked)
  • 1 cup lettuce
  • 1/2 cup refried beans (from a can)
  • 1 medium tomato, chopped
  • 2 Tbsp. red onion, chopped
  • 2 radishes, sliced
  • 1/4 cup cucumber slices

Finishing Touches

  • 3 Tbsp. salsa (store-bought)
  • 2 Tbsp. cilantro, chopped
  • 1 pickled jalapeño, sliced
  • 1/2 cup shredded cheese
  • 1/3 cup sour cream

Instructions

  1. Beat the Chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound them with a meat mallet or rolling pin until they are evenly flattened to ensure even cooking.
  2. Prepare Marinade: In a bowl, combine 2 tablespoons of oil with lime juice, smoked paprika, cumin, garlic powder, onion powder, chili powder, and salt to create a flavorful marinade mixture.
  3. Marinate Chicken: Coat the flattened chicken breasts thoroughly in the spice marinade and let them sit for 30 minutes to absorb the flavors.
  4. Cook Chicken: Heat 1 tablespoon of oil in a pan over medium heat. Once hot, place the marinated chicken breasts in the pan and cook for 10–15 minutes, turning as needed, until the chicken is cooked through and no longer pink inside.
  5. Slice Chicken: Remove the cooked chicken from the pan and slice it into strips for easy serving.
  6. Assemble Bowl: On a serving plate or bowl, arrange the cooked cilantro lime rice in the center. Surround the rice with the corn, lettuce, refried beans, chopped tomato, red onion, sliced radishes, and cucumber slices.
  7. Add Flavorings: Spoon the store-bought salsa over the assembled ingredients, sprinkle with chopped cilantro, and add sliced pickled jalapeños to taste.
  8. Finish with Cheese and Sour Cream: Top the bowl with shredded cheese and a generous dollop of sour cream to add creaminess and richness to the dish.

Notes

  • Marinating the chicken for at least 30 minutes enhances the flavor but can be extended up to 2 hours for deeper taste.
  • You can substitute refried beans with black beans or pinto beans for a different texture and flavor.
  • For a spicier kick, add more jalapeños or include a dash of hot sauce with the salsa.
  • Use freshly cooked rice if possible for best flavor; cilantro lime rice can be made by mixing cooked rice with chopped cilantro and lime juice.
