Ingredients
Pasta and Chicken
- 16 oz. rotini pasta
- 2 cups shredded rotisserie chicken
Sauce
- 4 tablespoons butter
- 6 cloves garlic, minced
- 4 tablespoons flour
- 32 ounces half and half
- 1 tablespoon Dijon mustard
- 8 ounces shredded Swiss cheese, divided
- 4 ounces shredded Parmesan cheese
- Kosher salt, to taste
- Fresh cracked pepper, to taste
Topping
- 1 cup crushed Ritz crackers
- Fresh chopped parsley, for garnish
Instructions
- Preheat Oven: Heat your oven to 350 degrees Fahrenheit to prepare for baking the casserole later.
- Cook Pasta: Boil the rotini pasta according to package directions, cooking just until al dente for perfect texture.
- Make Sauce Base: While pasta cooks, melt butter in a large sauté pan over medium-low heat. Add minced garlic and flour, stirring constantly for about one minute to create a flavorful roux.
- Add Liquid and Season: Slowly whisk in the half and half along with Dijon mustard, salt, and pepper. Continue cooking over medium-low heat, stirring occasionally for 3-4 minutes until the sauce thickens but does not boil or simmer.
- Melt Cheeses: Stir in half of the shredded Swiss cheese and all of the Parmesan cheese into the sauce until melted and creamy.
- Combine Pasta and Chicken: Add the cooked pasta and shredded rotisserie chicken into the sauce. Toss well to evenly coat everything, warming through. Adjust seasoning with salt and pepper to taste.
- Assemble Casserole: Transfer the mixture to a 9×13-inch oven-safe baking dish or an enameled cast iron pan. Spread the remaining Swiss cheese over the top evenly.
- Bake: Cover the dish and bake at 350°F for 5-10 minutes until the cheese melts and the casserole is heated through.
- Add Crunchy Topping: Sprinkle the crushed Ritz crackers on top and place under the broiler for 1-2 minutes until the crackers turn golden brown and crispy.
- Garnish and Serve: Remove from oven, garnish with fresh chopped parsley, and serve immediately for a delicious classic-inspired meal.
Notes
- Use rotisserie chicken for convenience and extra flavor, but cooked chicken breasts can also be used.
- Be careful not to let the sauce boil to prevent curdling and maintain creaminess.
- The cracker topping can be substituted with panko breadcrumbs for a different texture.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
- For a lower-calorie option, substitute half and half with whole milk and reduce cheese quantity slightly.
