Pasta and Chicken

  • 16 oz. rotini pasta
  • 2 cups shredded rotisserie chicken

Sauce

  • 32 ounces half and half
  • 1 tablespoon Dijon mustard
  • 8 ounces shredded Swiss cheese, divided

Instructions

  1. Preheat Oven: Heat your oven to 350 degrees Fahrenheit to prepare for baking the casserole later.
  2. Cook Pasta: Boil the rotini pasta according to package directions, cooking just until al dente for perfect texture.
  3. Make Sauce Base: While pasta cooks, melt butter in a large sauté pan over medium-low heat. Add minced garlic and flour, stirring constantly for about one minute to create a flavorful roux.
  4. Add Liquid and Season: Slowly whisk in the half and half along with Dijon mustard, salt, and pepper. Continue cooking over medium-low heat, stirring occasionally for 3-4 minutes until the sauce thickens but does not boil or simmer.
  5. Melt Cheeses: Stir in half of the shredded Swiss cheese and all of the Parmesan cheese into the sauce until melted and creamy.
  6. Combine Pasta and Chicken: Add the cooked pasta and shredded rotisserie chicken into the sauce. Toss well to evenly coat everything, warming through. Adjust seasoning with salt and pepper to taste.
  7. Assemble Casserole: Transfer the mixture to a 9×13-inch oven-safe baking dish or an enameled cast iron pan. Spread the remaining Swiss cheese over the top evenly.
