Ingredients

Fajita Filling

  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced

Instructions

  2. Cook the Chicken Mixture: Add the shredded chicken, salsa, cumin, garlic powder, chili powder, and kosher salt to the pan. Stir well to combine all ingredients and cook for an additional 2-3 minutes to heat through and allow flavors to meld. Remove from heat and transfer to a bowl.
  3. Prepare Tortillas and Assemble Wraps: Warm the tortillas in the microwave for 15-20 seconds to make them more pliable. Lay each tortilla flat and spread a few tablespoons of refried beans down the center. Spoon about 1 cup of the chicken fajita mixture over the beans and sprinkle with shredded cheese if using. Roll the tortillas tightly to enclose the filling.
