These Chicken Fajitas Wraps offer a quick and flavorful meal combining sautéed bell peppers and onions with seasoned shredded chicken, wrapped in warm tortillas with refried beans and optional cheese. Ingredients
Fajita Filling
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 3 cups shredded chicken (rotisserie chicken or leftover chicken)
- 3/4 cup salsa
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/4 teaspoon kosher salt (more to taste)
Wrap Assembly
- 1 cup fat-free refried beans (or homemade version, see notes)
- 1/2 cup shredded cheese (optional)
- 6 large tortillas (flour or gluten-free tortillas recommended; avoid corn tortillas)
- Any toppings or dipping sauces of choice (salsa, guacamole, cilantro, jalapeño, sour cream)
Instructions
- Cook the vegetables. Heat a large saucepan over medium heat and add the olive oil. Once hot, add the sliced red bell pepper and red onion. Cook for 3-4 minutes until the vegetables begin to soften.
- Add chicken and spices. Stir in the shredded chicken, salsa, cumin, garlic powder, chili powder, and salt. Mix well and cook for an additional 2-3 minutes to combine the flavors. Remove from heat and transfer the mixture to a bowl.
- Warm the tortillas. Microwave the tortillas for 15-20 seconds until warm and pliable, making them easier to roll.
- Assemble the wraps. Spread a few tablespoons of refried beans in the center of each tortilla. Spoon about 1 cup of the chicken fajita mixture on top of the beans. Sprinkle with shredded cheese if desired, then roll up the tortillas to enclose the filling.
- Brown the wraps. Place the saucepan back on medium heat and spray with olive oil. Place each wrap seam-side down in the pan and cook for about one minute on each side until golden and crispy. Repeat with remaining wraps.
- Serve. Serve the wraps hot with your choice of toppings and dipping sauces such as salsa, guacamole, cilantro, jalapeño, or sour cream.
Notes
- For a homemade version of refried beans, you can sauté canned pinto or black beans with garlic, onion, and seasonings until soft and mashable.
- Use flour or gluten-free tortillas for best wrap stability; corn tortillas may tear and fall apart.
- Feel free to customize toppings to your liking including fresh vegetables, hot sauce, or sour cream alternatives.
