Description

Chicken Pomodoro is a vibrant, rustic Italian-inspired dish featuring tender chicken breast cutlets simmered in a fresh, flavorful sauce made from cherry tomatoes, garlic, onions, white wine, and basil. Ready in just 30 minutes, this meal strikes a perfect balance of savory and fresh flavors, making it an ideal quick yet elegant dinner option for four.

Ingredients

Chicken

  • 2 lbs Chicken breast (cutlets)
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 2 tsp Kosher salt
  • 1/2 tsp Black pepper

Pomodoro Sauce

  • 4 cups Cherry tomatoes
  • 4 cloves Garlic (minced)
  • 1/2 cup Onion (chopped)
  • 2/3 cup Broth (chicken or vegetable)
  • 1/3 cup White wine
  • 1/2 cup Basil (chopped)
  • 2 tbsp Olive oil (for sautéing onions and garlic)

Instructions

  1. Season the Chicken: Season both sides of the chicken breast cutlets with kosher salt, garlic powder, and black pepper to enhance flavor.
  2. Cook the Chicken: Heat a drizzle of olive oil in a skillet over medium-high heat. Add chicken cutlets and cook without moving for about 5 minutes per side to develop a golden crust. Cook in batches if needed to avoid overcrowding. Remove cooked chicken and set aside.
  3. Sauté Onions: Lower heat to medium. In the same pan, add 2 tablespoons of olive oil and sauté chopped onion, stirring constantly until soft, tender, and golden brown.
  4. Add Garlic: Add the minced garlic to the pan and sauté for about one minute until fragrant and cooked but not browned.
  5. Make the Pomodoro Sauce: Add cherry tomatoes, chopped basil, broth, and white wine to the pan. Use a wooden spoon to scrape any flavorful bits off the bottom. Stir well to combine.
  6. Simmer Sauce: Let the sauce simmer for 5 to 8 minutes until the tomatoes soften and release their juices, thickening slightly.
  7. Combine Chicken and Sauce: Return the cooked chicken to the pan. Cover with a lid and simmer over medium-low heat for 2 to 3 minutes allowing flavors to meld and chicken to heat through.
  8. Serve: Optionally top with additional fresh garlic or basil and serve immediately, enjoying the vibrant tomato and basil flavors paired with tender chicken.

Notes

  • Cooking the chicken without moving it helps develop a nice crust.
  • Use chicken broth or vegetable broth depending on dietary preferences.
  • White wine adds acidity and depth; substitute with more broth if avoiding alcohol.
  • Fresh basil is preferred for best flavor, but dried basil can be used in a pinch.
  • This dish pairs well with pasta, rice, or crusty bread to soak up the sauce.
