Pomodoro Sauce
- 4 cups Cherry tomatoes
- 4 cloves Garlic (minced)
- 1/2 cup Onion (chopped)
- 2/3 cup Broth (chicken or vegetable)
- 1/3 cup White wine
- 1/2 cup Basil (chopped)
- 2 tbsp Olive oil (for sautéing onions and garlic)
Instructions
- Season the Chicken: Season both sides of the chicken breast cutlets with kosher salt, garlic powder, and black pepper to enhance flavor.
- Cook the Chicken: Heat a drizzle of olive oil in a skillet over medium-high heat. Add chicken cutlets and cook without moving for about 5 minutes per side to develop a golden crust. Cook in batches if needed to avoid overcrowding. Remove cooked chicken and set aside.
- Sauté Onions: Lower heat to medium. In the same pan, add 2 tablespoons of olive oil and sauté chopped onion, stirring constantly until soft, tender, and golden brown.
