  • 8 ounces shredded mild cheddar cheese
  • 1 cup heavy cream
  • 5 tablespoons butter

  • 1/2 teaspoon rubbed sage
  • 1/3 cup all-purpose flour
  • 1.5 cups chicken stock
  • Kosher salt

Casserole Topping

  • 32 ounce bag frozen tater tots


Instructions

  1. Preheat Oven: Heat your oven to 375 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the casserole.
  2. Sauté Onion: Heat olive oil over medium heat in a large pan. Add diced onion with salt and pepper, cooking and stirring frequently for 4 minutes until softened.
  3. Add Garlic and Herbs: Stir in minced garlic, Italian seasoning, rubbed sage, and additional salt and pepper. Cook for 1 minute, stirring frequently to release fragrant flavors.
  4. Create Roux: Add butter to the pan and stir until melted. Sprinkle the all-purpose flour evenly over the mixture and stir to combine. Cook for about a minute to eliminate raw flour taste, stirring constantly.
  5. Add Liquids: Slowly pour in chicken stock, stirring continuously to deglaze the pan and incorporate all bits stuck to the bottom. Then add heavy cream and stir well.
  6. Thicken Sauce: Continue heating and stirring for 1-2 minutes until the sauce thickens slightly and becomes creamy.
  7. Mix Chicken and Vegetables: Add shredded rotisserie chicken and frozen peas and carrots to the sauce. Season with salt and pepper, stirring well and cooking for about a minute to combine flavors.
  8. Layer Cheese: Spread shredded cheddar cheese evenly over the meat and vegetable mixture in the pan.
  9. Add Tater Tots: Arrange frozen tater tots in a single even layer on top of the cheese.
  10. Bake Casserole: Place the dish uncovered in the preheated oven. Bake for 45 minutes or until the tater tots become crispy and the casserole is bubbling around the edges. Optionally, broil for 2-3 minutes at the end to crisp the tater tots further.
