- 8 ounces shredded mild cheddar cheese
- 1 cup heavy cream
- 5 tablespoons butter
Pantry Items & Seasonings
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning

- 1/3 cup all-purpose flour
- 1.5 cups chicken stock

- Fresh cracked pepper
Casserole Topping
- 32 ounce bag frozen tater tots
Instructions
- Preheat Oven: Heat your oven to 375 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the casserole.
- Sauté Onion: Heat olive oil over medium heat in a large pan. Add diced onion with salt and pepper, cooking and stirring frequently for 4 minutes until softened.
- Add Garlic and Herbs: Stir in minced garlic, Italian seasoning, rubbed sage, and additional salt and pepper. Cook for 1 minute, stirring frequently to release fragrant flavors.
- Create Roux: Add butter to the pan and stir until melted. Sprinkle the all-purpose flour evenly over the mixture and stir to combine. Cook for about a minute to eliminate raw flour taste, stirring constantly.
- Add Liquids: Slowly pour in chicken stock, stirring continuously to deglaze the pan and incorporate all bits stuck to the bottom. Then add heavy cream and stir well.
- Thicken Sauce: Continue heating and stirring for 1-2 minutes until the sauce thickens slightly and becomes creamy.
- Mix Chicken and Vegetables: Add shredded rotisserie chicken and frozen peas and carrots to the sauce. Season with salt and pepper, stirring well and cooking for about a minute to combine flavors.
- Layer Cheese: Spread shredded cheddar cheese evenly over the meat and vegetable mixture in the pan.
- Add Tater Tots: Arrange frozen tater tots in a single even layer on top of the cheese.
- Bake Casserole: Place the dish uncovered in the preheated oven. Bake for 45 minutes or until the tater tots become crispy and the casserole is bubbling around the edges. Optionally, broil for 2-3 minutes at the end to crisp the tater tots further.
- Rest: Remove the casserole from the oven and allow it to sit for 5 minutes to set before serving.
- Garnish and Serve: Sprinkle fresh chopped parsley on top for a pop of color and freshness. Serve warm and enjoy.
