Description

These Chili Cheese Baked Beef Tacos are a delicious and easy-to-make meal perfect for weeknight dinners. Ground beef is sautéed with onions and spices, mixed with hearty chili and sharp cheddar cheese, then wrapped in tortillas and baked until golden and bubbly. The result is a comforting, cheesy taco with rich flavors and a crispy baked finish.

Ingredients

Meat and Vegetables

  • 1 Pound Ground Beef
  • 1 Small Yellow Onion (finely diced)

Spices and Seasonings

  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Ground Black Pepper

Other Ingredients

  • 2 Cans Chili (Medium vegetarian chili recommended, such as Amy’s)
  • 1 ¼ Cups Cheddar Cheese (finely grated)
  • 8 Flour Tortillas (taco or fajita size)
  • Cooking spray (for topping)

Instructions

  1. Preheat the oven and prepare the skillet: Preheat your oven to 400°F (204°C). While the oven heats, place a large skillet on the stove over medium heat to warm up.
  2. Brown the ground beef: Add the ground beef to the hot skillet and cook for 3-4 minutes until it starts to brown.
  3. Sauté onions and seasonings: Add the finely diced yellow onion, garlic powder, and ground black pepper to the skillet. Continue sautéing for another 3-4 minutes until the onions soften and the beef is fully browned through.
  4. Combine chili and cheese: Stir in the 2 cans of chili and half a cup of shredded cheddar cheese. Mix thoroughly until the filling is well combined. Remove the skillet from heat.
  5. Assemble the tacos: Line a baking sheet with parchment paper. Fill each flour tortilla with a generous scoop of the chili-beef mixture. Top each filled tortilla with 1 to 2 tablespoons of cheddar cheese.
  6. Prepare for baking: Fold each tortilla closed and arrange them on the baking sheet. Lightly spray the tops of the tortillas with cooking spray to help achieve a crispy texture.
  7. Bake and broil the tacos: Bake the tacos in the preheated oven for 12 minutes. Then, switch the oven to broil and cook for an additional 2 minutes until the tops turn golden brown and bubbly. Watch closely to prevent burning.
  8. Serve: Remove the tacos from the oven, optionally garnish with chopped parsley if desired, and enjoy immediately.

Notes

  • You can substitute ground turkey or chicken for the beef for a leaner option.
  • If you prefer, use corn tortillas instead of flour tortillas.
  • Make sure to watch the tacos carefully during the broil to avoid burning.
  • Adding chopped fresh cilantro or a dollop of sour cream can enhance the flavors when serving.
  • This recipe works well with vegetarian chili for a meatless variation.
