Ingredients

Meat and Marinade

  • 2 tablespoons olive oil
  • 2 pounds ribeye steak, cut into bite-sized cubes
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper

Vegetables

  • 1 medium white onion, cut into bite-sized pieces
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 green bell pepper, cut into bite-sized pieces

Sauce

  • 1 1/4 cup beef broth
  • 1/3 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon fish sauce
  • 1 teaspoon black pepper
  • 1 teaspoon sesame oil

Garnish

  • Sliced green onion
  • Sesame seeds


Instructions

  1. Heat the olive oil: Warm 2 tablespoons of olive oil in a large sauté pan over medium-high heat to prepare for cooking the steak.
  2. Marinate and cook the steak: In a large bowl, combine the ribeye steak cubes with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Toss to coat the meat evenly. Sprinkle 1/2 teaspoon black pepper over the meat, then add it to the hot pan. Cook for 4 to 5 minutes, turning the cubes to brown all sides thoroughly.
  3. Cook the vegetables: Remove the cooked steak from the pan and set aside. Add the chopped white onion, red bell pepper, and green bell pepper to the same pan. Sauté the vegetables for about 4 minutes until they begin to soften.
  4. Prepare and add the sauce: In a bowl, whisk together beef broth, soy sauce, cornstarch, oyster sauce, brown sugar, rice vinegar, minced garlic, minced ginger, fish sauce, black pepper, and sesame oil. Pour this sauce mixture over the sautéed vegetables. Simmer for 3 to 4 minutes until the sauce thickens slightly.
  5. Combine steak and sauce: Return the cooked steak cubes to the pan with the sauce and vegetables. Simmer everything together for another 3 to 4 minutes to let the flavors meld and heat through.
  6. Serve the dish: Remove from heat and serve the pepper steak hot over steamed rice or noodles. Garnish with sliced green onions and sesame seeds for added freshness and crunch.

Notes

  • Use ribeye steak for tenderness, but sirloin or flank steak can be substituted.
  • Adjust the amount of black pepper to your taste for desired spice level.
  • Be sure to cut the meat and vegetables into uniform bite-sized pieces for even cooking.
  • The sauce thickens as it simmers; if too thick, add a splash of beef broth to loosen.
