Ingredients

Wet Ingredients

  • 120 gr (1/2 cup) Unsalted Butter (soft)
  • 1 Egg (medium to large, at room temperature)
  • 1 teaspoon Vanilla Paste (or vanilla extract)

Sweeteners

  • 75 gr (1/3 cup) Brown Sugar
  • 75 gr (1/3 cup) Caster Sugar

Dry Ingredients

  • 200 gr (2 cups) Almond Meal (or almond flour)
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Fine Table Salt

Add-ins

  • 150 gr (5.5 oz) Chocolate Chunks (or Chocolate Chips)
  • Flaked Almonds (to taste, optional)


Instructions

  1. Prepare Chocolate: If using chocolate chunks, chop a chocolate bar into large chunks and set aside.
  2. Line Baking Sheet: Line a baking sheet with baking paper or a baking mat to prevent sticking.
  3. Cream Butter and Sugars: In a large bowl, cream very soft butter with brown sugar and caster sugar using a hand mixer or stand mixer with paddle attachment until it resembles a thick paste.
  4. Add Egg and Vanilla: Mix in the egg and vanilla paste on slow speed until combined.
  5. Combine Dry Ingredients: Add almond meal, baking soda, and salt to the wet mixture and mix until a thick cookie dough forms.
  6. Fold in Add-ins: Gently fold in chocolate chunks or chips and, if desired, flaked almonds for extra texture.
  7. Chill Dough: Scoop cookie dough onto the prepared baking tray using a medium ice cream scoop, leaving room for spreading. Chill in the fridge for 30 minutes to help maintain shape during baking.
