  • 200 g (1 ¼ cups + 3 tbsp) plain (all purpose) flour
  • 2 tsp cornflour (cornstarch)
  • 0.5 tsp bicarbonate of soda (baking soda)
  • 0.5 tsp salt

  • 120 g (¾ cup + 3 tbsp) dark chocolate, chopped (plus extra for studding)
  • 6 Oreos, crumbed
  • 6 Oreos, roughly chopped (plus extra for studding)


Instructions

  1. Prepare baking tray: Line a baking tray with parchment paper and set it aside to ensure a non-stick surface for baking.
  2. Create cookie dough: In a large mixing bowl, cream together the unsalted butter, caster sugar, and brown sugar until the mixture is smooth and paler in color. Add the vanilla extract and mix through evenly. Next, sift in the plain flour, cornflour, bicarbonate of soda, and salt. Mix until evenly combined and the dough is damp but not clumping. Stir in the crumbed Oreos, roughly chopped Oreos, and chopped dark chocolate. Finally, add the egg and mix until the dough starts to clump together.
  3. Form and chill dough balls: Divide the dough into thirteen equal cookie dough balls. Arrange them spaced apart on the prepared baking tray. Place the tray in the refrigerator for at least 30 minutes to chill and firm up the dough; chill longer or freeze the dough balls for later baking if desired.
