Description

Delightfully sweet and crunchy, this Chocolate Covered Strawberry Crack combines a buttery toffee base on saltine crackers topped with rich semi-sweet and white chocolate swirls and fresh chopped strawberries. Perfectly sweet and tangy with a blend of textures, this no-fuss dessert is chilled to set for optimal flavor and crispness.

Ingredients

Base

  • 54 Saltine Crackers (about 1 ½ sleeves)
  • 1 cup Brown Sugar
  • 1 cup Butter

Chocolate Topping

  • 12 oz Semi Sweet Chocolate Chips
  • 6 oz White Chocolate Chips

Fruit Topping

  • 2 cups Strawberries (chopped and patted dry)

Instructions

  1. Prepare Strawberries: Dice the strawberries into small bite-sized pieces. Use a paper towel to pat the pieces dry to absorb any excess moisture, which is crucial for preventing sogginess later. Set aside.
  2. Preheat Oven and Line Pan: Preheat your oven to 400°F (204°C). Line a large sheet pan with foil for easy cleanup. Arrange an even layer of saltine crackers covering the pan entirely and set aside.
  3. Make Toffee Mixture: In a saucepan over medium heat, melt the butter and brown sugar together. Bring the mixture to a rolling boil for 3 minutes while stirring continuously to thicken the toffee.
  4. Pour and Bake Toffee: Quickly pour the hot toffee mixture evenly over the cracker layer, spreading to cover all crackers. Bake in the preheated oven for 7 minutes.
  5. Add Semi-Sweet Chocolate: Remove the pan from the oven and immediately sprinkle the semi-sweet chocolate chips evenly over the hot toffee.
  6. Spread Melted Chocolate: As the chocolate melts, use an offset spatula to spread it evenly like icing over the entire surface.
  7. Swirl White Chocolate: Sprinkle the white chocolate chips over the melted semi-sweet chocolate. If needed, return the pan to the oven for 1 more minute to help melt. Use a toothpick to swirl the white chocolate into the semi-sweet chocolate layer creating a marbled effect.
  8. Add Strawberries: Pat the strawberry pieces dry again with a fresh paper towel, then sprinkle an even layer of the chopped strawberries over the warm chocolate until covered.
  9. Chill and Set: Place the pan in the refrigerator for at least one hour to cool and fully set the toffee bark.
  10. Serve: Once set, break the toffee into pieces and enjoy. Keep refrigerated before serving to maintain freshness and prevent strawberries from releasing excess juice.

Notes

  • Patting the strawberries dry is essential to avoid soggy toffee bark from excess moisture.
  • This toffee bark must stay refrigerated until serving to keep strawberries fresh and prevent juice leakage.
  • You can use an offset spatula or a silicone spatula to spread the melted chocolate evenly.
  • For easier cleanup, lining the pan with foil is recommended.
  • Try using fresh, firm strawberries for best texture and flavor.
