Description
A creamy, protein-packed chocolate peanut butter ice cream made with cottage cheese, sweetened naturally with maple syrup and enhanced with cocoa, peanut butter, and mini chocolate chips—a quick and healthier homemade frozen treat.
Ingredients
Ice Cream Base
- 1-1/2 cups cottage cheese (Daisy brand recommended)
- 1/3 cup maple syrup
- 1/4 cup cocoa powder
- 1/4 cup natural unsweetened creamy peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Toppings
- 2 tablespoons chopped peanuts
- 2 tablespoons Enjoy Life Semi-Sweet Mini Chocolate Chips
- Additional 3 tablespoons natural unsweetened creamy peanut butter (warmed)
Instructions
- Blend the Ice Cream Base: Combine the cottage cheese, maple syrup, cocoa powder, 1 tablespoon of peanut butter, vanilla extract, and salt in a food processor or blender. Blend at high speed until the mixture is smooth and creamy, ensuring all ingredients are well incorporated.
- Warm Additional Peanut Butter: Heat the remaining 3 tablespoons of natural unsweetened creamy peanut butter either on the stove over low heat or in the microwave in short bursts until it becomes runny and easy to drizzle.
- Assemble and Swirl: Drizzle the warmed peanut butter over the blended ice cream mixture. Sprinkle the chopped peanuts and mini chocolate chips on top. Using a spoon, gently swirl these ingredients together in small circular motions to create a marbled effect without fully mixing them in.
- Freeze the Ice Cream: Transfer the prepared ice cream mixture into an airtight container and place it in the freezer for at least two hours or until it becomes firm. Remove the ice cream from the freezer and let it sit at room temperature for 10-15 minutes if it is too hard to scoop, allowing it to soften slightly before serving. Enjoy your homemade chocolate peanut butter cottage cheese ice cream!
Notes
- Use full-fat cottage cheese for the creamiest texture.
- Maple syrup provides natural sweetness, but you can adjust according to taste.
- Ensure peanut butter is natural and unsweetened to keep flavors balanced.
- The swirl effect enhances texture and flavor but avoid over-mixing to preserve distinct layers.
- If you prefer a softer texture, you can soften the ice cream by leaving it out a bit longer before scooping.
- Enjoy Life Mini Chocolate Chips are allergy-friendly and dairy-free, but regular mini chocolate chips can be substituted.
- Protein content is higher than traditional ice cream due to cottage cheese, making it a good option for a healthier dessert.
