Description

Delightfully rich and crunchy Chocolate Peanut Butter Pistachio Bars that combine creamy peanut butter, smooth dark chocolate, ancient grain cereal, and crunchy salted pistachios. These no-bake bars are easy to prepare, set in the freezer, and make a perfect sweet snack or dessert for any occasion.


Ingredients

Chocolate Peanut Butter Mixture

  • 1 cup dark chocolate chips (Ghirardelli recommended)
  • 2/3 cup creamy natural peanut butter (no sugar added)

Mix-ins and Topping

  • 1/2 cup ancient grain cereal (such as Kashi original)
  • 1/2 cup salted shelled pistachios, roughly chopped


Instructions

  1. Prepare Pan: Spray a loaf pan or 9×6-inch rectangular pan with non-stick spray. Line the pan with parchment paper, ensuring the ends overlap to easily lift the bars out later. Spray the parchment paper surface with non-stick spray as well.
  2. Melt Chocolate and Peanut Butter: Set up a double boiler by bringing water to a simmer in a pot, ensuring the water does not touch the bowl placed on top. Add dark chocolate chips and peanut butter into the top bowl. Stir continuously with a spatula while melting the mixture slowly. Continue stirring until the chocolate is fully melted and blended smoothly with the peanut butter.
  3. Combine Cereal and Pour: Remove the chocolate-peanut butter bowl from heat. Stir in the ancient grain cereal until evenly incorporated. Pour the mixture into the prepared pan and spread it out into an even layer using a spatula.
  4. Add Pistachios and Chill: Sprinkle the roughly chopped salted pistachios evenly over the top of the mixture. Place the pan in the freezer and allow it to chill for 2 to 3 hours or until the bars are completely set and firm.
  5. Slice and Store: Remove the pan from the freezer and let it rest at room temperature for a few minutes before slicing. Use a sharp knife to carefully cut into 6 bars or squares. Store the bars in an airtight container in the freezer or refrigerator to maintain freshness.
