These Chocolate Stuffed Churro Pancakes combine the fun of a churro’s cinnamon sugar coating with the indulgent surprise of melted chocolate inside. Ingredients
Batter
- 1 1/2 cups self raising flour
- 1 teaspoon baking powder (heaped)
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/3 teaspoon salt
- 1/4 cup butter (melted and cooled slightly)
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 1/4 cups milk
Filling
- 1/2 cup chocolate chips (or buttons)
Cinnamon Sugar Coating
- 4 tablespoons sugar
- 1 teaspoon ground cinnamon
Instructions
- Prepare the Batter: In a large bowl, combine the self raising flour, heaped baking powder, sugar, ground cinnamon, and salt. Make a well in the center and add the melted butter, egg, vanilla extract, and milk. Slowly whisk the mixture until smooth and well combined. Set the batter aside.
- Cook the Pancakes: Heat a small amount of butter in a nonstick pan over low to medium heat. Pour less than 1/4 cup of batter onto the pan and gently spread it out with the back of your ladle. Sprinkle chocolate chips onto the center of the batter, then carefully pour a little more batter over the top to fully cover the chocolate chips.
- Flip the Pancakes: When the pancake underside turns golden, carefully flip it and cook the other side until it is golden as well. Note that unlike typical pancakes, bubbles won’t form on top, so check the edges for doneness before flipping. Repeat this process for the remaining batter and chocolate chips.
- Coat with Cinnamon Sugar: In a wide, shallow dish, mix the sugar and ground cinnamon. While the pancakes are still warm, immediately place each one into the cinnamon sugar mixture and coat both sides evenly. Transfer the coated pancakes onto a serving dish.
- Serve: These pancakes are delicious served with fresh fruit, ice cream, or frozen yogurt, or enjoyed on their own as a sweet treat.
