- 1 tsp kosher salt
Chocolate Topping
- 8 oz semi-sweet chocolate chips
- 1 tbsp coconut oil (or unsalted butter)

Instructions
- Preheat the waffle iron: Begin by preheating your waffle iron to ensure it’s hot and ready for baking the cookies.
- Prepare the batter: In a large bowl, combine the melted butter, granulated sugar, eggs, and vanilla extract. Mix thoroughly until smooth and well blended.
- Mix dry ingredients: Sift together the all-purpose flour, Dutch-process cocoa powder, and kosher salt, then gradually add this to the wet ingredients. Stir until the batter is uniform with no dry streaks.
- Cook the waffle cookies: Grease the preheated waffle iron lightly. Spoon heaping teaspoons of the batter onto the iron, depending on its size you can bake 2 to 4 cookies at a time. Close the iron and cook for 2-5 minutes, or until the edges are crispy but the centers remain soft. Timing may vary depending on your specific waffle iron.
- Continue baking: Carefully remove the cooked waffle cookies and repeat the greasing and baking process with the remaining batter.
