Instructions

  1. Preheat the waffle iron: Begin by preheating your waffle iron to ensure it’s hot and ready for baking the cookies.
  2. Prepare the batter: In a large bowl, combine the melted butter, granulated sugar, eggs, and vanilla extract. Mix thoroughly until smooth and well blended.
  3. Mix dry ingredients: Sift together the all-purpose flour, Dutch-process cocoa powder, and kosher salt, then gradually add this to the wet ingredients. Stir until the batter is uniform with no dry streaks.
  4. Cook the waffle cookies: Grease the preheated waffle iron lightly. Spoon heaping teaspoons of the batter onto the iron, depending on its size you can bake 2 to 4 cookies at a time.
