Description

This Chunky Monkey Baked Oatmeal is a comforting and nutritious breakfast dish that combines creamy mashed bananas, crunchy walnuts, and rich chocolate chips baked into a hearty oatmeal base. Sweetened naturally with maple syrup and flavored with cinnamon and vanilla, it’s a delicious way to start your day or enjoy a wholesome snack.

Ingredients

Wet Ingredients

  • 2 eggs
  • 1 3/4 cups almond milk
  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/4 cup melted butter or coconut oil
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 1/4 cups old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Add-ins

  • 1/2 cup chopped walnuts, plus more for the top
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup chocolate chips, plus more for the top

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the oatmeal.
  2. Combine Wet Ingredients: In a large mixing bowl, whisk together the eggs, almond milk, mashed bananas, maple syrup, melted butter, and vanilla extract until fully combined and smooth.
  3. Add Dry Ingredients: To the wet mixture, add the old-fashioned oats, ground cinnamon, baking powder, and salt; stir gently until everything is well incorporated into a thick batter.
  4. Fold in Add-ins: Carefully fold in the chopped walnuts, shredded coconut, and chocolate chips into the batter to distribute evenly without overmixing.
  5. Transfer to Baking Dish: Grease a 9×9-inch baking dish and pour the oatmeal batter into it. Spread evenly, then sprinkle additional chopped walnuts and chocolate chips on top for extra texture and flavor.
  6. Bake: Place the baking dish in the preheated oven and bake the oatmeal for 35-40 minutes, or until the oatmeal is set and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the baked oatmeal to cool slightly before slicing into portions. Serve warm for a hearty breakfast or snack.

Notes

  • You can substitute almond milk with any other plant-based or dairy milk of your choice.
  • For a vegan version, replace eggs with flax eggs and use coconut oil instead of butter.
  • Feel free to swap walnuts with pecans or almonds based on preference or allergy considerations.
  • Adding extra chocolate chips on top creates an appealing look and more bursts of chocolate flavor in each bite.
  • Store leftovers covered in the refrigerator for up to 4 days and reheat before serving.
