Description

Cilantro Lime Rice is a fragrant and flavorful side dish featuring fluffy long grain rice infused with fresh cilantro and zesty lime juice. This simple yet delicious recipe pairs perfectly with Mexican, Asian, or grilled dishes, adding a bright, fresh taste to any meal.

Ingredients

Rice and Cooking Ingredients

  • 2 cups long grain rice (preferably jasmine rice or basmati)
  • 3.5 cups water
  • 2 tablespoons butter
  • 2 teaspoons salt

Flavoring Ingredients

  • 1 bunch cilantro, minced
  • 1/2 lime, juiced

Instructions

  1. Wash the Rice: Rinse the rice under cold water in a large bowl for 2-5 minutes until the water runs clear, then soak the rice for at least 5 minutes to remove excess starch and improve texture.
  2. Cook the Rice: Bring 3.5 cups of water to a boil in a large saucepan. Add the rice and 2 teaspoons of salt, cover immediately, and reduce heat to low. Simmer gently for 10 minutes or until the water is fully absorbed and the rice is tender.
  3. Finish with Butter and Flavor: Turn off the heat and add 2 tablespoons of butter to the rice, allowing it to melt and incorporate with the heat residual. Just before serving, stir in the finely minced cilantro and freshly squeezed lime juice to evenly distribute the bright flavors.

Notes

  • Rinsing and soaking rice helps to achieve fluffier, less sticky rice.
  • Adjust the amount of lime juice to taste for more or less tanginess.
  • Use fresh cilantro for the best flavor.
  • You can substitute butter with olive oil for a dairy-free option.
  • This rice pairs well with tacos, grilled chicken, or fish dishes.
