- Prepare the ingredients: Place a medium non-stick saucepan over medium-low heat on the stove. Add the raw almonds, pure maple syrup, cinnamon, and a pinch of salt to the pan. Stir well to coat all the almonds evenly with the maple syrup and spices.
- Cook the almonds: Stir the mixture constantly over medium-low heat. Be patient as the maple syrup will begin to evaporate slowly. This process takes about 8 to 10 minutes; continuous stirring is key to prevent burning and ensure even cooking.
- Finish and cool: Once the mixture is no longer wet and the maple syrup has crystallized and stuck to the almonds forming a crunchy coating, remove the pan from heat. Transfer the almonds to a separate bowl and allow them to cool completely before serving.
Notes
- For a substitute, you can replace the pure maple syrup with white sugar, but the texture and flavor will be somewhat different.
