A delightful Cinnamon Roll Casserole perfect for a cozy breakfast or brunch. This easy-to-make dish layers cut-up cinnamon rolls with a rich egg and cinnamon custard, baked to golden perfection and drizzled with sweet icing. It serves 12 and can be prepared ahead of time and baked fresh when ready.
Ingredients
Casserole Base
- 4 tablespoons butter, melted
- 2 tubes refrigerated cinnamon rolls (16 rolls total), cut into about 8 pieces each (Pillsbury brand recommended)
Custard Mixture
- 4 large eggs
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1/4 cup maple syrup
Topping
- Icing from the cinnamon roll tubes
Instructions
- Prepare the baking dish and cinnamon rolls: Preheat your oven to 375ºF (190ºC). Pour the melted butter evenly into a 9×13-inch glass baking dish. With kitchen shears or a pizza cutter, cut each refrigerated cinnamon roll into roughly 8 small pieces. Layer these pieces evenly across the bottom of the prepared dish.
- Mix and pour the custard: In a large liquid measuring cup or bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until the eggs are fully combined and the mixture is smooth. Pour this custard mixture evenly over the layered cinnamon roll pieces in the baking dish. Then, drizzle the maple syrup evenly over the egg mixture.
- Bake the casserole: Optionally, cover and refrigerate the casserole overnight for convenience or bake immediately. Bake uncovered at 375ºF (190ºC) for 20 to 25 minutes until the cinnamon rolls are puffed and golden brown on top.
- Finish with icing and serve: Allow the casserole to cool for about 5 minutes after baking. Remove the icing covers from the cinnamon roll tubes and microwave the icing on medium (50%) power for 10 to 15 seconds until it is thin enough to drizzle. Drizzle the warmed icing generously over the casserole slices before serving. Enjoy warm!
