Description

Delight in these whimsical Circus Animal Cookie Truffles, a fun and colorful dessert made by combining crushed circus animal cookies with cream cheese, dipped in vibrant candy melts, and topped with playful sprinkles. Perfect for a party treat or a sweet indulgence, these truffles blend creamy, crunchy, and sweet textures with easy no-bake preparation and decorative flair.

Ingredients

Base

  • 15 oz. Circus Animal Cookies
  • 8 ounces cream cheese

Coating and Decoration

  • 12 oz. pink candy melts
  • 10 oz. white candy melts
  • ½ cup bright pink candy melts
  • Rainbow sprinkles

Instructions

  1. Crush Cookies: Crush the Circus Animal Cookies into fine crumbs using your hands, a rolling pin, or a food processor, ensuring there are no large chunks for a smooth mixture.
  2. Combine Mixture: In a large mixing bowl or food processor, combine the cookie crumbs with the cream cheese until the mixture is well blended and holds together.
  3. Form Balls: Roll the mixture into 1-inch diameter balls and place them on a baking sheet lined with parchment paper to prevent sticking.
  4. Chill Truffles: Refrigerate the cookie balls for 20 minutes to firm up, allowing easier handling for dipping.
  5. Melt Candy Coatings: In separate microwave-safe bowls, melt the white and pink candy melts in 30-second increments, stirring thoroughly after each interval until smooth and fully melted.
  6. Dip Truffles: Using a fork or toothpick, dip half of the chilled truffles into the pink candy melts and the other half into the white candy melts. Allow excess coating to drip off before transferring back to the baking sheet.
  7. Decorate Pink Truffles: Immediately after dipping in pink candy melts, sprinkle rainbow sprinkles over the truffles to add a festive touch.
  8. Drizzle White Truffles: Fill two piping bags with melted pink and bright pink candy melts, snip the tips, and drizzle over the white-coated truffles decoratively.
  9. Set Coating: Allow all truffles to set completely at room temperature or refrigerate until the candy coating hardens before serving.

Notes

  • Store truffles in an airtight container lined with a paper towel in the refrigerator for up to one week to maintain freshness.
  • Keeping truffles at room temperature can cause the dough inside to expand and crack the candy coating.
  • Once the candy coating is set, truffles can be frozen in a sealed freezer bag for up to 6 weeks and should be thawed overnight in the refrigerator before eating.
  • Use parchment paper to prevent sticking during the rolling and dipping process.
  • Be careful not to overheat candy melts as it can cause them to seize or burn.
