Parmesan Panko Topping
- 1.5 tbsp olive oil
- 23 g butter (room temperature)
- 1 tsp mustard
- 12 g Parmesan (grated)
- 35 g panko breadcrumbs
- 8 g fresh parsley (finely chopped)
- ½ tsp black pepper
- Salt, to taste
Fish
- 2 cod fillets (approximately 250 g or 9 oz)
- Lemon wedges, to serve
Instructions
- Prepare the topping mixture: In a bowl, combine the olive oil, room temperature butter, mustard, grated Parmesan, panko breadcrumbs, finely chopped fresh parsley, salt, and black pepper. Mix thoroughly until a crumbly, cohesive mixture forms.
- Coat the cod fillets: Pat the cod fillets dry with paper towels. Evenly coat the tops and sides of each fillet with the Parmesan panko mixture, pressing gently to adhere well.
- Bake method: Preheat the oven to 190°C (374°F). Place the coated fillets in a baking dish. Bake in the preheated oven for 20 minutes or until the cod is cooked through and the panko topping is golden and crispy. Remove from the oven.
- Air fryer method: Preheat the air fryer to 200°C (400°F). Lightly brush the air fryer basket with oil to prevent sticking. Place the coated cod fillets into the basket in a single layer. Air fry for 10-14 minutes until the topping is brown and crisp and the fish is cooked through.
- Serve: Immediately serve the cooked cod with freshly cut lemon wedges to squeeze over for a touch of acidity and brightness.
