These Coffee Cinnamon Rolls combine the classic sweet and spicy flavors of cinnamon rolls with a rich coffee twist, creating a perfect breakfast or brunch treat. Soft, fluffy dough is filled with a cinnamon, brown sugar, and coffee mixture, topped with pecans and finished with a creamy coffee icing for a delightful balance of sweetness and bold coffee flavor.
Ingredients
Dough
- 57 g unsalted butter (¼ cup / 2 oz)
- 1 cup cold milk (250 ml)
- 455 g plain flour (all-purpose flour) (3 ½ cups / 1 lb)
- 2 ¼ teaspoons instant dry yeast (1 sachet / 7 g)
- ⅓ cup white granulated sugar (66 g / ~2¼ oz)
- ½ teaspoon salt
- 1 large egg
Filling
- ½ cup packed brown sugar (100 g / 3 ½ oz)
- 3 teaspoons cinnamon
- 2 teaspoons instant coffee powder
- ½ cup pecans, roughly chopped (60 g / ~2 oz)
- 57 g unsalted butter, melted (¼ cup / 2 oz)
Topping
- 1 egg yolk
- 1 teaspoon water
- 2 teaspoons maple syrup
- Remaining pecan pieces (reserved from filling)
Icing
- ¼ cup thickened cream (heavy cream) (60 ml)
- 6 teaspoons finely ground instant coffee
- 2 ½ cups icing sugar (powdered sugar) (325 g / ~11 ½ oz)
Instructions
- Making the Dough: In a small saucepan over low heat, melt together the butter and roughly one third of the milk. Stir or swirl to melt without overheating. Add the remaining cold milk and set aside.
- Mix Dry Ingredients: In the bowl of a stand mixer, add the flour, yeast, sugar, and salt. Mix well to combine.
- Add Wet Ingredients: Pour in the warm milk mixture, give it a quick stir, then add the egg.
- Knead the Dough: Attach the dough hook to the stand mixer and mix the dough for 6-7 minutes until smooth and elastic in texture.
- First Rise: Brush a clean bowl with a little oil and place the dough inside, flipping it to coat all surfaces with oil. Cover with plastic wrap and let it sit in a warm place for 1 hour or until doubled in size.
- Prepare Filling: In a small bowl, combine the brown sugar, cinnamon, 2 teaspoons instant coffee powder, and most of the pecans, reserving a couple tablespoons for later.
- Roll Out Dough: On a lightly floured surface, roll the dough out into a large rectangle about 5-6 mm thick.
- Preheat Oven and Prepare Tray: Preheat oven to 200°C (180°C fan forced) / 375°F and grease a 9×13 inch baking tray.
- Assemble Cinnamon Rolls: Brush the melted butter over the dough, then scatter the combined filling ingredients evenly over it.
- Form Rolls: Roll the dough up tightly from one long side to the other into a long log, then cut into 12 even pieces.
- Arrange and Second Rise: Place the rolls evenly spaced on the baking tray cut side up. Let them rest and rise for another 15 minutes.
- Prepare for Baking: Beat together the egg yolk and water, then brush the mixture over the exposed dough of the rolls.
- Add Topping Pecans: Mix the reserved pecans with maple syrup, then dot them over the tops of the rolls.
- Bake: Bake for 22-25 minutes, turning the tray at halfway mark, until rolls are deep golden brown. Let cool before icing.
- Make Icing: Place cream and instant coffee in a microwave-safe bowl and heat for 20-30 seconds until warm. Stir until coffee dissolves.
- Finish Icing: Sift in icing sugar and stir well. Adjust thickness by adding more sugar or cream as desired. Pipe or spoon icing onto the cooled cinnamon rolls.
