Description

This Coffee Overnight Oats recipe is a delicious and energizing breakfast option that combines the rich flavor of brewed coffee with creamy oats, chia seeds, and natural sweetness from dates and maple syrup. Easy to prepare the night before, it offers a convenient, nutritious start to your day with a subtle coffee kick and caramel-like date puree for added indulgence.

Ingredients

Overnight Oats

  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • Pinch sea salt
  • 3/4 cup unsweetened, plain almond milk
  • 1/2 cup brewed coffee
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Date Caramel

  • 4 Medjool dates, pitted (the softer the better)
  • Pinch of salt
  • Water, as needed for blending

Instructions

  1. Combine Ingredients: In a medium storage container, mix together the rolled oats, chia seeds, pinch of sea salt, almond milk, brewed coffee, maple syrup, and vanilla extract until fully combined. Then cover the container.
  2. Chill Overnight: Place the covered container in the refrigerator and let it sit for at least 2 hours or overnight to allow the oats and chia seeds to absorb the liquid and flavors.
  3. Adjust and Serve: Before serving, stir the oats, and add a splash of almond milk if you prefer a thinner consistency. Serve cold directly from the fridge.
  4. Make Date Caramel: Place the pitted Medjool dates in a high-speed food processor. Blend on high until smooth and creamy. If the dates aren’t soft enough to blend easily, add water in 1/2 teaspoon increments until you reach a smooth caramel-like consistency. Add a pinch of salt to enhance flavor.
  5. Serve with Toppings (Optional): Spoon the date caramel over the overnight oats for a natural sweet topping that complements the coffee flavor perfectly.

Notes

  • Use soft Medjool dates for an easier and smoother caramel consistency.
  • Adjust the coffee amount depending on your preferred caffeine strength and oat consistency.
  • Can substitute almond milk with any other plant-based or dairy milk.
  • This recipe is easily doubled or tripled for meal prepping.
  • Overnight oats can be stored refrigerated up to 3 days.
  • Feel free to add toppings like nuts, seeds, or fresh fruit before serving.
