Chocolate Base

  • 1 package white almond bark (or white chocolate chips)
  • 1 package pink melting chocolate
  • 1 package red melting chocolate

Instructions

  1. Wash the mold: Thoroughly wash and dry your chocolate mold to ensure it is clean and free of moisture before starting the process.
  2. Melt detail chocolate: Choose the melting chocolate color you want to use for the words or details on your lollipops. Pour a small amount into a microwave-safe container and melt in 15-second intervals, stirring in between until fully melted.
  3. Fill details: Using a toothpick or a squeeze bottle/piping bag, carefully fill the detail sections of the mold cavities with the melted colored chocolate to create your design or words.
  4. Melt base chocolate: Select the color or white almond bark you’d like for the main part of the lollipop. Melt it similarly in a microwave-safe container using 15-second intervals until smooth.
  5. Spoon base chocolate: Spoon the melted base chocolate into the mold on top of the detail work, filling about halfway up the cavity.
  6. Tap out air bubbles (first): Gently lift the mold about an inch off the counter and drop it back down a few times to remove any air bubbles and ensure the chocolate spreads evenly.
  7. Add lollipop sticks: Gently lay a lollipop stick onto each filled mold cavity so it rests on the partially filled chocolate.
  8. Fill remaining cavity: Using the same or a new color of melted chocolate, fill the mold cavities the rest of the way, covering the lollipop sticks but being careful not to overfill.
  9. Tap out air bubbles (second): Once again, carefully tap the mold to release any trapped air bubbles and to level the chocolate.
  10. Add sprinkles: Sprinkle your choice of decorative sprinkles onto the tops of the filled molds if desired for extra festive flair.
  11. Set the lollipops: Place the filled mold into the refrigerator for at least 10 minutes, or longer if needed, until the chocolate sets and hardens completely.
