Description

This Cool Ranch Turkey Taco Casserole is a flavorful and hearty dish combining ground turkey cooked with taco seasoning, creamy Greek yogurt, and ranch seasoning, layered with Cool Ranch Doritos, corn, tomatoes, and cheese. Baked to perfection, it offers a delightful combination of textures and bold flavors, making it a perfect family-friendly meal.


Ingredients

Meat and Vegetables

  • 1 Pound ground turkey
  • 1 Red onion, diced (divided)
  • ½ Cup jalapenos, canned, sliced (divided)
  • 11 Ounces frozen fiesta corn
  • 1 Can Rotel tomato and green chilies (10 Ounces, drained)

Seasonings and Dairy

  • 1 Package taco seasoning (1 ¼ Ounces)
  • 1 Cup Greek yogurt
  • 1 Tablespoon ranch seasoning
  • 3 Cups taco cheese, shredded (or similar cheese)

Other

  • 2 Bags Doritos, Cool Ranch flavor (9 ¼ Ounces each)
  • Fresh cilantro, for garnish
  • Olive oil or canola oil spray for greasing


Instructions

  1. Preheat the oven: Preheat your oven to 375°F to prepare for baking the casserole.
  2. Cook the turkey mixture: Heat a pan over medium-high heat and add ground turkey, half of the diced red onion, and half of the sliced jalapeños. Sprinkle with taco seasoning and cook for about 10 minutes until the turkey is browned and cooked through. Drain excess grease from the pan.
  3. Mix in creamy ingredients: Remove the pan from heat and stir in Greek yogurt and ranch seasoning until everything is well combined and creamy.
  4. Prepare Doritos layers: Take ¾ of the Doritos and place them in a Ziploc bag. Break them into pieces about the size of a quarter for layering. Keep the remaining ¼ of Doritos in a separate bag to crush finely later.
  5. Grease casserole dish and assemble first layer: Lightly spray a 9×13-inch casserole dish with olive or canola oil. Layer half of the broken Dorito pieces evenly on the bottom, then top with half of the cooked ground turkey mixture.
  6. Add the vegetables and cheese: Layer half of the fiesta corn, half of the drained tomatoes with green chilies, and half of the shredded cheese over the turkey.
  7. Repeat layers: Repeat the layers with the remaining Doritos pieces, ground turkey mixture, corn, and tomatoes to evenly distribute all ingredients.
  8. Top with crushed Doritos and remaining cheese: Crush the Doritos in the second bag into fine crumbs and sprinkle them evenly over the top of the casserole. Then add the remaining shredded cheese for a cheesy, crunchy topping.
  9. Bake: Place the casserole in the preheated oven and bake for 30 minutes until the cheese is melted and bubbly and the casserole is heated through.
  10. Garnish and serve: Remove from oven and top with the remaining diced red onion and jalapeños. Garnish with fresh cilantro and serve with shredded lettuce and cabbage if desired.

Notes

  • You can substitute ground beef or chicken for ground turkey if preferred.
  • For extra heat, use fresh jalapeños instead of canned.
  • To make it lower fat, use low-fat or non-fat Greek yogurt and reduced-fat cheese.
  • If Doritos are unavailable, use any similar flavored tortilla chips.
  • Leftovers can be refrigerated and reheated; cover tightly to maintain moisture.
