Description

Cowboy Cookie Cake is a decadent layered dessert combining giant chewy spiced cookies packed with oats, chocolate chips, coconut, and walnuts, stacked and frosted with a creamy vanilla cream cheese icing. This indulgent treat delivers a wonderful mix of textures and warm flavors, perfect for special occasions or when you crave a rich, homemade dessert.

Ingredients

Cookie Dough

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • ½ tablespoon vanilla extract
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup old-fashioned oats
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped walnuts

Cream Cheese Frosting

  • 8 ounces (1 package) cream cheese (room temperature)
  • ½ cup (1 stick) unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Oven and Baking Sheets: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, nutmeg, ginger, and salt to create a well-distributed spice mixture.
  3. Cream Butter and Sugars: In a large bowl, cream the unsalted butter, granulated sugar, and light brown sugar together until the mixture is light and fluffy to incorporate air for a better cookie texture.
  4. Add Egg and Vanilla: Beat in the egg and vanilla extract to the creamed mixture, one at a time, ensuring thorough incorporation and a smooth batter.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture into the wet ingredients, stirring just until combined. Be sure to scrape down the sides and bottom to incorporate all ingredients evenly.
  6. Add Mix-ins: Gently fold in the semi-sweet chocolate chips, old-fashioned oats, shredded coconut, and chopped walnuts until evenly distributed without overmixing.
  7. Form and Flatten Dough Balls: Divide the dough into 4 equal portions and place them spaced at least 3 inches apart on the prepared baking sheets. Press down each dough ball slightly to about ½ inch thick and 4-5 inches in diameter to ensure even baking.
  8. Bake Cookies: Bake in the preheated oven for 13-17 minutes, or until edges are lightly tan. The centers may appear slightly underbaked but will firm up as they cool. Cookies should be approximately 6-7 inches in diameter.
  9. Shape and Cool Cookies: If cookies are not perfectly round, immediately press around the edges with a flat tool to smooth them. Cool cookies on the baking sheets until firm enough to transfer, then move to a wire rack to cool completely.
  10. Prepare Cream Cheese Frosting: In a mixing bowl, combine room temperature cream cheese, unsalted butter, powdered sugar, and vanilla extract. Beat until the frosting is smooth and creamy without lumps.
  11. Assemble the Cake: Spread a layer of cream cheese frosting evenly over one cookie. Repeat layering alternating cookies and frosting until all 4 cookie layers are stacked.
  12. Chill and Serve: Refrigerate the assembled Cowboy Cookie Cake for about an hour to allow the frosting to set and flavors to meld. Slice carefully and serve chilled for best results. Enjoy!

Notes

  • Room temperature ingredients improve mixing and texture.
  • Pressing dough balls evenly helps achieve uniform cookie size and baking.
  • Don’t overbake; the cookies will firm up as they cool.
  • Chilling the assembled cake helps the frosting set for cleaner slices.
  • Variations: Substitute walnuts with pecans or skip coconut if preferred.
  • Store leftover cake covered in refrigerator for up to 3 days.
