Cheese Ball Ingredients

  • 10 ounce goat cheese log (283 grams)
  • 3/4 cup pecans (raw, unsalted)
  • 2/3 cup dried cranberries
  • Approx. 2 Tbsp fresh thyme leaves (removed from woody stems)
  • Honey, to drizzle

  • Crackers or toasted baguette slices


Instructions

  1. Prepare the surface: Line a small to medium-sized baking sheet or a large plate with parchment paper to place the finished cheese balls on.
  2. Chop ingredients: Using a sharp chef’s knife, chop the pecans and dried cranberries into small pieces to help them stick evenly to the goat cheese.
  3. Strip thyme leaves: Remove the thyme leaves from their woody stems by holding the top of the stem and gliding your hand down to strip the leaves in one motion. Set aside approximately 2 tablespoons.
  4. Combine coating mixture: Place the chopped pecans, cranberries, and thyme leaves together in a bowl or on a baking sheet. Toss to evenly distribute all ingredients.
  5. Form goat cheese balls: Using your hands, a spoon, or a cookie scoop, scoop out goat cheese in portions about 2 teaspoons in size. Roll each portion into a smooth ball shape.
  6. Coat the cheese balls: Roll each goat cheese ball gently in the pecan-cranberry-thyme mixture, pressing lightly so the coating sticks well to the surface. Place coated balls on the prepared parchment-lined sheet.
  7. Chill the balls: Refrigerate the cheese balls for at least 30 minutes to allow them to firm up and the flavors to meld.
  8. Serve: Remove from the fridge just before serving. Arrange on a serving platter, drizzle with honey to add a touch of sweetness, and serve alongside crackers or toasted baguette slices. Enjoy!
