Ingredients
Chicken
- 1 ½ pounds boneless skinless chicken breasts, sliced thin lengthwise
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
Sauce
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 (8-ounce) package cream cheese, room temperature and cubed
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
Instructions
- Prepare Chicken: Cut the 1 ½ pounds of boneless skinless chicken breasts in half lengthwise so each piece is about 1 inch thick. Season both sides generously with salt and pepper.
- Cook Chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chicken and cook for 7-8 minutes on each side or until the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
- Sauté Garlic: In the same skillet, melt 1 tablespoon unsalted butter. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
- Deglaze Pan: Pour in 1 cup chicken broth, scraping the bottom of the skillet with a wooden spoon to loosen any browned bits for extra flavor.
- Make Cream Sauce: Bring the broth to a simmer, then add the room temperature cream cheese cubes. Whisk continuously until the cream cheese is fully melted and the sauce is smooth.
- Season Sauce: Stir in 1 teaspoon Dijon mustard, 1 teaspoon Italian seasoning, and ½ cup grated Parmesan cheese. Let the sauce simmer for 2 minutes until it starts to thicken.
- Combine and Serve: Return the cooked chicken breasts to the skillet and coat them well with the creamy sauce. Adjust seasoning with additional salt and pepper if needed. Serve the chicken topped with sauce over your choice of potatoes or rice.
Notes
- For best sauce texture, ensure cream cheese is at room temperature before melting.
- Use a meat thermometer to guarantee chicken is cooked safely to 165°F.
