Instructions
- Saute the aromatics: Heat the olive oil in a skillet over medium heat. Add the diced onion and jalapeno peppers and sauté for 3 to 4 minutes until softened. Then add the minced garlic, kosher salt, ground cumin, and chili powder. Stir continuously for about one minute until fragrant.
- Blend it all together: Transfer the sautéed onion, jalapeno, and garlic mixture to a food processor. Add the rinsed and drained black beans, chopped fresh cilantro, fresh lime juice, and water. Blend until the mixture reaches a smooth, creamy consistency. Taste the dip and adjust seasoning or spice levels to your preference.
- Garnish and serve: Spoon the black bean dip into a serving bowl. Garnish with additional chopped fresh cilantro and crumbled cotija cheese if desired. Serve with tortilla chips, vegetable sticks, or as a spread.
