Ingredients
Fish and Seasoning
- 4 portions Sizzlefish Red Snapper
- 3 tbsp olive oil
- 2 tbsp Cajun seasoning (divided)
Sauce
- 1 tbsp butter
- 1 tsp minced garlic
- 1 cup low sodium chicken stock
- 1 (14 oz.) can diced tomatoes, drained
- 4 oz. cubed cream cheese
- 1 tbsp fresh chopped parsley
Instructions
- Heat Oil: Heat olive oil in a large skillet over medium-high heat for 2 minutes to prepare for searing the fish.
- Season Snapper: Pat dry the snapper portions with paper towels to remove excess moisture, then season them liberally with Cajun seasoning on all sides.
- Sear Snapper: Add the seasoned snapper to the hot oil and sear each side for about 2 minutes until nicely browned. Remove snapper from skillet and place on a plate. Discard used oil and wipe skillet clean for the sauce.
- Prepare Sauce: Melt butter in the skillet over medium-low heat, then add minced garlic and sauté for 1 minute until fragrant. Pour in chicken stock, add cream cheese cubes and drained diced tomatoes, stirring frequently until the cream cheese melts and the sauce becomes smooth, simmering for about 7 minutes.
- Finish Cooking Snapper: Return the snapper to the skillet with the sauce and continue heating for 2 minutes to allow flavors to meld and fish to warm through.
- Garnish and Serve: Serve the snapper hot, garnished with fresh chopped parsley for a burst of color and flavor.
Notes
- Be sure to blot the snapper dry before seasoning to help achieve a good sear.
- Use low sodium chicken stock to control the saltiness of the dish.
- Cajun seasoning amounts can be adjusted based on your preferred spice level.
- If dairy-free, substitute cream cheese with a suitable alternative.
- Serve with rice or crusty bread to soak up the creamy sauce.
