Ingredients

Fish and Seasoning

  • 4 portions Sizzlefish Red Snapper
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning (divided)

Sauce

  • 1 tbsp butter
  • 1 tsp minced garlic
  • 1 cup low sodium chicken stock
  • 1 (14 oz.) can diced tomatoes, drained
  • 4 oz. cubed cream cheese
  • 1 tbsp fresh chopped parsley


Instructions

  1. Heat Oil: Heat olive oil in a large skillet over medium-high heat for 2 minutes to prepare for searing the fish.
  2. Season Snapper: Pat dry the snapper portions with paper towels to remove excess moisture, then season them liberally with Cajun seasoning on all sides.
  3. Sear Snapper: Add the seasoned snapper to the hot oil and sear each side for about 2 minutes until nicely browned. Remove snapper from skillet and place on a plate. Discard used oil and wipe skillet clean for the sauce.
  4. Prepare Sauce: Melt butter in the skillet over medium-low heat, then add minced garlic and sauté for 1 minute until fragrant. Pour in chicken stock, add cream cheese cubes and drained diced tomatoes, stirring frequently until the cream cheese melts and the sauce becomes smooth, simmering for about 7 minutes.
  5. Finish Cooking Snapper: Return the snapper to the skillet with the sauce and continue heating for 2 minutes to allow flavors to meld and fish to warm through.
  6. Garnish and Serve: Serve the snapper hot, garnished with fresh chopped parsley for a burst of color and flavor.
