Ingredients

Crust

  • 1 (9-inch) pre-made pie shell or pie crust
  • Pie weights (about a cup of dry beans or rice)

Filling

  • 6 eggs
  • ¾ cup whole milk
  • ¼ cup whole milk Greek yogurt
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (choice of your favorite cheese)
  • 1 cup cooked fillings (such as sautéed vegetables, bacon, ham, or mushrooms)
  • 2 tablespoons chopped tender herbs of choice (such as parsley, chives, or thyme)


Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 375˚F (190˚C). Place the prepared 9-inch pie crust on a sheet pan. Line the inside of the crust with parchment paper and fill with pie weights or dried beans to prevent bubbling during baking.
  2. Blind Bake the Crust: Bake the crust with pie weights for 12 minutes to set the dough. Then carefully remove the parchment paper and weights, and bake the crust for an additional 10 minutes until it turns golden brown on the edges. Remove from oven and reduce heat to 350˚F (175˚C).
  3. Prepare the Filling: In a large mixing bowl, whisk together 6 eggs, ¾ cup whole milk, ¼ cup whole milk Greek yogurt, ½ teaspoon salt, and ½ teaspoon black pepper until smooth and well combined. Gently fold in 1 cup shredded cheese, 1 cup of your cooked fillings, and 2 tablespoons chopped fresh herbs.
  4. Fill and Bake: Pour the prepared filling mixture into the par-baked pie crust. Place it in the oven and bake at 350˚F for 35 to 40 minutes, or until the crust edges are browned and the center of the quiche is just slightly jiggly but set.
  5. Serve: Allow the quiche to cool slightly before slicing. Serve warm or at room temperature for a delicious meal.
