Ingredients
Main Mixture
- 1 cup (8 oz) sour cream
- 3 cups cooked shredded rotisserie chicken
- 2 cups frozen mixed vegetables
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Stuffing Topping
- 1 box (6 oz) chicken stuffing mix
- 8 tablespoons (1 stick) unsalted butter, melted
Topping
- 1 cup shredded Colby Jack cheese
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Mix the creamy sauce: In a large bowl, combine the sour cream, shredded rotisserie chicken, frozen mixed vegetables, cream of mushroom soup, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until the mixture is smooth and well blended.
- Prepare stuffing: Prepare the chicken stuffing mix according to the package instructions on the stovetop. After cooking, let it cool slightly to avoid upsetting the casserole layers.
- Assemble casserole: Spread the creamy chicken and vegetable mixture evenly into the prepared baking dish. Evenly layer the prepared stuffing mix on top of the creamy mixture.
- Add cheese topping: Sprinkle the shredded Colby Jack cheese uniformly over the stuffing layer to ensure a cheesy, bubbly topping when baked.
- Bake: Place the assembled casserole in the preheated oven and bake for 45-50 minutes, or until the cheese is melted and the stuffing is lightly browned and crisp on top.
- Rest and serve: Allow the casserole to stand for 10 minutes after removing it from the oven to set and cool slightly. Serve warm, ideally with dinner rolls for a complete meal.
Notes
- This casserole can be prepared a day ahead; just assemble and refrigerate, then bake when ready to serve.
- You can substitute mixed vegetables with fresh veggies like carrots and peas if preferred.
- Using rotisserie chicken adds convenience and enhances flavor, but leftover cooked chicken works well too.
- For a crispier topping, broil the casserole for 2-3 minutes at the end of baking, watching closely to prevent burning.
