Description

This creamy cucumber tomato salad is a refreshing and vibrant side dish perfect for warm weather meals. Combining crisp cucumbers, sweet tomatoes, and a tangy, herb-infused dressing made with sour cream and mayonnaise, it offers a delightful balance of flavors and textures. Quick to prepare, this salad is ideal for picnics, barbecues, or a light, healthy accompaniment to any meal.

Ingredients

Vegetables

  • 4 cups sliced English cucumber (1 ½ to 2 cucumbers)
  • ½ cup sliced red onion
  • 1 pint grape or cherry tomatoes (sliced in half)

Dressing

  • ⅓ cup sour cream
  • 3 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • ¾ teaspoon granulated sugar
  • 1 ½ teaspoons chopped fresh dill (or ½ teaspoon dried)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the vegetables: Toss together the sliced cucumbers, sliced red onions, and halved grape or cherry tomatoes in a large bowl. Set this vegetable mixture aside while you prepare the dressing.
  2. Make the dressing: In a large measuring cup or small bowl, whisk together the sour cream, mayonnaise, olive oil, apple cider vinegar, granulated sugar, chopped fresh dill, garlic powder, kosher salt, and black pepper until smooth and well combined.
  3. Combine and coat: Drizzle the creamy dressing over the vegetable mixture and gently stir to coat all the veggies as evenly as possible. Taste and adjust seasoning with additional salt and black pepper if desired. Serve immediately or chill to let flavors meld.

Notes

  • Use fresh dill for the best flavor, but dried dill is a good substitute if fresh isn’t available.
  • This salad is best served fresh but can be refrigerated for up to 24 hours; the cucumbers may release water over time.
  • For a lighter version, substitute Greek yogurt for sour cream and mayonnaise.
  • This salad pairs wonderfully with grilled meats, sandwiches, or as a light side dish for summer meals.
