Ingredients

For the Salisbury Steaks

  • 1/4 cup breadcrumbs
  • 1/4 cup whole milk
  • 1/4 cup finely minced or grated yellow onion
  • 3 cloves garlic, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 egg yolk
  • 2 tablespoons ketchup
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

For the Mushroom Gravy

  • 3 tablespoons butter
  • 1 small yellow onion, petite diced
  • 8 ounces sliced mushrooms
  • 3 cloves garlic, grated
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3 tablespoons all-purpose flour
  • 1.5 cups beef stock
  • 2 teaspoons Worcestershire sauce
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste


Instructions

  1. Prepare the breadcrumb mixture: In a large bowl, add 1/4 cup breadcrumbs and pour 1/4 cup whole milk over them. Stir well to combine so the breadcrumbs soak up the milk fully.
  2. Mix seasonings and binders: Add grated yellow onion, grated garlic, Italian seasoning, garlic powder, onion powder, egg yolk, ketchup, Dijon mustard, Worcestershire sauce, and salt and pepper to the breadcrumb mixture. Use your hands to knead and mix thoroughly until evenly combined.
  3. Add ground beef: Incorporate ground beef into the mixture using your hands. Mix gently and just until combined to avoid overworking the meat.
  4. Heat oil: Place 1 tablespoon olive oil in a large sauté pan over medium-high heat and heat until shimmering.
  5. Form patties: Divide the meat mixture into 6 equal portions. Shape each into an oval-shaped steak, about 1/2 inch thick.
  6. Brown the steaks: Add the patties to the hot pan and cook for 2 to 3 minutes per side until browned but not fully cooked through. Remove them from the pan and set aside.
  7. Sauté onions: Without wiping the pan, reduce heat to medium and add butter. Once melted, add petite diced onions with salt and pepper. Cook for about 4 minutes, stirring frequently and scraping up browned bits from the bottom.
  8. Add mushrooms and spices: Add sliced mushrooms, grated garlic, onion powder, and garlic powder. Continue cooking and stirring occasionally for about 4 minutes until mushrooms are softened.
  9. Create roux: Sprinkle the flour over the vegetables and stir continuously for about a minute to cook out the raw flour taste.
  10. Deglaze pan: Gradually whisk in about 1/2 cup of beef stock, scraping the bottom of the pan to loosen any remaining bits.
  11. Add remaining liquids: Whisk in the remaining 1 cup of beef broth and Worcestershire sauce. Season with salt and pepper. Stir until the sauce is smooth and creamy.
  12. Simmer with steaks: Bring the gravy to a simmer over medium heat. Return the browned steaks along with any juices to the pan. Reduce heat to low and simmer gently for 3 to 4 minutes until the sauce thickens and steaks are cooked through.
  13. Adjust seasoning: Taste the sauce and adjust salt and pepper as needed for flavor balance.
  14. Serve and garnish: Garnish with fresh chopped parsley and serve the Salisbury steaks topped with mushroom gravy over mashed potatoes or your preferred side dish.
