  • 250 g Swiss brown mushrooms, sliced
  • 150 g white button mushrooms, sliced
  • 1 sheet puff pastry, thawed
  • 1 brown onion, diced
  • 4 garlic cloves, minced
  • 60 g cheddar cheese, grated
  • 3 tsp olive oil, divided
  • Handful chopped parsley
  • Salt and pepper, to taste


Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the tart.
  2. Sauté Onion and Garlic: Dice the brown onion and mince the garlic cloves. Heat 2 teaspoons of olive oil in a skillet over medium heat. Add the diced onions and cook until translucent, then add the garlic and sauté until fragrant.
  3. Sauté Mushrooms: Add the sliced Swiss brown and white button mushrooms to the skillet and increase heat to high. Sauté until the mushrooms start to brown, then add the remaining teaspoon of olive oil. Season with salt and pepper. Remove from heat and allow the mixture to cool to room temperature.
  4. Prepare Puff Pastry: Place the thawed puff pastry sheet on a baking tray lined with parchment paper. Lightly score a 1-inch border around the pastry without cutting through. Use a fork to poke several holes in the center of the puff pastry to prevent rising.
  5. Assemble Tart: Sprinkle the grated cheddar cheese evenly over the center of the puff pastry within the scored border. Spread the cooled sautéed mushroom mixture on top of the cheese. Lightly spray the border with olive oil spray or brush it with egg wash to promote browning.
  6. Bake: Bake the tart in the preheated oven for 15 to 20 minutes, or until the pastry is golden brown and puffed.
