Ingredients
Main Ingredients
- 2 boneless skinless chicken breasts, cut into 1 inch pieces
- 1 teaspoon minced garlic
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 onion, chopped
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 1/2 cups brown rice, uncooked
- 2 cups shredded cheddar cheese
Instructions
- Combine Ingredients: Place the chicken pieces, minced garlic, salt, pepper, chopped onion, chicken broth, cream of chicken soup, and uncooked brown rice into the crock pot. Stir well to combine all ingredients evenly.
- Cook: Cover the crock pot and cook on high for 3.5 to 4 hours, or until the rice has absorbed all the chicken broth and is tender.
- Add Cheese: Stir in the shredded cheddar cheese thoroughly. Cover again and let the residual heat melt the cheese for 5 to 7 minutes.
- Serve: Once the cheese is melted and the dish is hot, serve warm and enjoy your creamy, cheesy chicken and rice meal.
Notes
- For best results, use fresh chicken broth and freshly shredded cheese.
- Brown rice requires a longer cooking time than white rice, so do not substitute without adjusting cooking time.
- You can add vegetables like peas or carrots at the start if desired.
- Ensure the chicken is fully cooked and rice is tender before serving.
- Leftovers can be refrigerated for up to 3 days and reheated gently.
