Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round pie dish or similar baking dish with nonstick cooking spray or a small amount of oil to prevent sticking.
- Prepare the egg mixture: In a high-speed blender, combine the eggs, cottage cheese, shredded cheddar cheese, onion powder, garlic powder, salt, and black pepper. Blend until the mixture is smooth and well combined, which should take about 30 seconds to 1 minute.
- Add vegetables: Remove the blended mixture from the blender and gently stir in the diced bell pepper and chopped spinach until evenly distributed.
- Bake the quiche: Pour the mixture into the prepared pie dish and place it in the oven. Bake for 50 to 60 minutes, or until the quiche is completely set in the middle and a knife inserted in the center comes out clean.
- Cool and serve: Allow the quiche to cool slightly before slicing and serving. This helps it set further and makes for easier slicing.
