Instructions

- Mix Yolks & Cheese – In a separate bowl, whisk together the egg yolks, blended cottage cheese, salt, and cornstarch (if using) until smooth and well combined.
- Combine Mixtures – Gently fold the whipped egg whites into the yolk and cottage cheese mixture in three batches. Do this gently to avoid deflating the whipped eggs, maintaining the batter’s lightness.
- Shape the Bread – Using a large spoon or ice cream scoop, portion the mixture onto your prepared baking sheet, forming 6 even mounds about 3-4 inches across.
- Bake – Bake for 25-30 minutes until the tops are golden brown and the cloud breads are firm to the touch.
