  • 1 pound English cucumber, sliced crosswise into 1/8 inch slices using a mandoline


Instructions

  1. Prepare the Cream Cheese Spread: In a mixing bowl, combine the softened cream cheese with mayonnaise, chopped fresh dill, chopped fresh chives, garlic powder, salt, and ground black pepper. Mix thoroughly until the mixture is smooth and all ingredients are fully incorporated. Set aside.
  2. Assemble the Sandwiches: Lay the slices of white sandwich bread out flat in a single layer. Evenly spread the prepared cream cheese mixture on one side of each bread slice. On half of the bread slices, layer the thinly sliced English cucumbers, covering the surface completely but not overly thick.
  3. Complete the Sandwiches and Slice: Top the cucumber-layered slices with the remaining bread slices, cream cheese side down, to form sandwiches. Press gently to secure. Using a sharp knife, slice each sandwich into four equal squares or triangles, as preferred.
