Description

This Curried Ground Beef with Peas and Potatoes recipe is a flavorful and hearty one-pan dish combining aromatic spices with tender ground beef, soft potatoes, and sweet peas. It’s perfect for a quick and satisfying meal, featuring classic curry powder and turmeric sautéed with garlic and ginger, then simmered to perfection. Ready in just 35 minutes, it serves six and makes for an easy, comforting dinner.

Ingredients

Spices and Aromatics

  • 4 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1/4 tsp crushed red pepper (optional)

Main Ingredients

  • 2 tbsp cooking oil
  • 1 lb ground beef (15% fat or less)
  • 1 russet potato (¾ lb.), peeled and cubed into ½-inch pieces
  • 1 cup beef broth
  • 1 cup frozen peas
  • 1/2 tsp salt
  • 2 green onions, sliced (optional)

Instructions

  1. Sauté Aromatics: Heat 2 tablespoons of cooking oil in a large deep skillet over medium heat. Add the minced garlic and grated ginger, then sauté for 1-2 minutes until fragrant.
  2. Add Spices: Stir in 1 tablespoon curry powder, 1 teaspoon turmeric, and 1/4 teaspoon crushed red pepper (if using). Continue to sauté for 1 more minute, allowing the spices to bloom and release their aromas.
  3. Cook Ground Beef: Add 1 pound of ground beef to the skillet. Cook, stirring frequently, until the beef is browned and cooked through with no pink remaining.
  4. Prepare Potatoes: While the beef cooks, peel the russet potato and cut it into ½-inch cubes.
  5. Add Potatoes and Broth: To the cooked beef mixture, add the cubed potatoes and 1 cup of beef broth. Stir to evenly distribute ingredients. Cover the skillet with a lid and increase heat to medium-high.
  6. Simmer Until Potatoes are Tender: Bring the broth to a boil, then reduce heat to medium-low. Let the mixture simmer gently for 10 minutes with the lid on, stirring occasionally to prevent sticking.
  7. Reduce Broth: Remove the lid and continue simmering for a few more minutes until most of the broth has evaporated and the potatoes are tender.
  8. Add Peas and Season: Stir in 1 cup of frozen peas and heat through for a couple of minutes. Taste the curry and add about 1/2 teaspoon salt or to preference.
  9. Garnish and Serve: Remove from heat, sprinkle sliced green onions on top if desired, and serve the curried ground beef hot.

Notes

  • Use ground beef with 15% fat or less to keep the dish flavorful but not overly greasy.
  • Adjust the crushed red pepper amount according to your heat preference or omit for milder flavor.
  • If beef broth is unavailable, you can substitute with water and a beef bouillon cube for richness.
  • For a quicker cook time, cut potatoes smaller, but keep them about ½ inch for the best texture.
  • Leftovers store well refrigerated for up to 3 days and reheat on stovetop or microwave.
