Description

These Dark Chocolate and Sea Salt Nut Bars combine a crunchy mix of roasted nuts and puffed rice, bound together with brown rice syrup, then coated with rich dark chocolate and a sprinkle of sea salt for the perfect balance of sweet and salty. Ideal as a wholesome snack or dessert, they offer a satisfying texture with a decadent chocolate finish.

Ingredients

Nut Mixture

  • 3/4 cup cashews
  • 3/4 cup peanuts
  • 1 cup almonds
  • 1/2 cup puffed rice
  • 1/4 cup brown rice syrup
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Chocolate Coating

  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional: flaky salt for topping

Instructions

  1. Preheat the Oven: Set your oven to 325˚F (160˚C) to warm up while preparing the nuts.
  2. Roast the Nuts: Spread the cashews, peanuts, and almonds evenly on a rimmed baking sheet. Bake for 5-8 minutes until they become fragrant and slightly browned, enhancing their flavor.
  3. Prepare the Pan: Line an 8×8 inch pan with parchment paper to prevent sticking and set it aside.
  4. Combine Nuts and Puffed Rice: In a large bowl, mix the roasted nuts with the puffed rice, tossing them together evenly.
  5. Mix Syrup and Flavorings: Microwave the brown rice syrup for 30 seconds to loosen its consistency, then whisk in vanilla extract and sea salt until fully blended. Pour this mixture over the nut and rice mixture and stir thoroughly until all pieces are coated.
  6. Shape the Bars: Transfer the coated mixture to the parchment-lined pan and press firmly into an even layer to form the base of the bars.
  7. Bake the Bars: Bake the nut mixture layer for 18-20 minutes. Remove from the oven and allow it to cool for about 30 minutes. Then, place on a cutting board and slice lengthwise into two halves, and each half into 5-6 thin bars. Let them cool completely.
  8. Melt the Chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well between each, until the mixture is smooth and fully melted.
  9. Coat the Bars: Dip the bottom of each bar into the melted chocolate, then lay them on a parchment-lined baking sheet. Drizzle any remaining melted chocolate on top of each bar and sprinkle with flaky salt if desired.
  10. Set the Chocolate: Refrigerate the coated bars until the chocolate is firm, then serve and enjoy!

Notes

  • You can customize the nut blend to your preference or use all one type of nut.
  • Brown rice syrup acts as a natural sweetener and binder, but honey or maple syrup can be substituted if needed.
  • Ensure bars are fully cooled before dipping to prevent melting the chocolate too much.
  • Store bars in an airtight container in the refrigerator for up to one week.
