- Make the dough: In a medium bowl, stir together the almond flour, cashew butter, kosher salt, maple syrup, and vanilla extract until smooth. The mixture will thicken and become dough-like. Then, fold in the mini chocolate chips evenly.
- Roll into bites: Divide the dough into 13 equal portions and roll each into balls roughly slightly smaller than ping pong balls for easy handling and uniform size.
- Chill to firm: Place the dough balls on a parchment-lined plate and refrigerate for at least 30 minutes. This firming step is crucial to make the bites cohesive and easy to dip in chocolate without falling apart.
- Melt the chocolate: Melt the chocolate chips using your preferred method: either in the microwave by heating in 20-second intervals and stirring in between until smooth and glossy, or with a double boiler by setting a heat-safe bowl over gently simmering water and stirring until fully melted.
- Chocolate dip: Dip the bottoms of the chilled dough balls into the melted chocolate, allowing excess chocolate to drip off. Place the dipped bites back onto the parchment-lined plate and refrigerate until the chocolate sets completely, about 15 minutes. Note that you’ll use roughly half the chocolate; melting the entire ½ cup makes dipping easier.
