Description

This Dr. Pepper Cake is a moist, rich chocolate cake enhanced with the unique flavor of Dr. Pepper soda. The soda replaces the water in the cake mix, adding depth and sweetness, while the decadent cocoa butter frosting is infused with reduced Dr. Pepper for a glossy, flavorful finish. Perfect for gatherings, this cake is easy to prepare and yields a delightful treat with the option of adding chopped nuts for extra texture.

Ingredients

Cake

  • 1 16 oz devil’s food box cake mix (plus ingredients listed on box to prepare cake mix minus water)
  • 1 cup Dr Pepper (to replace water called for in cake mix)

Frosting

  • ½ cup Dr Pepper
  • ½ cup unsweetened cocoa powder
  • ½ cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract
  • 4 cups sifted powdered sugar
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Prepare Cake Batter: Follow the package instructions for the devil’s food cake mix intended for a 9×13 inch pan, substituting 1 cup of Dr Pepper for the water. Mix all ingredients thoroughly to achieve a smooth batter.
  2. Bake the Cake: Pour the batter into the prepared 9×13 inch pan and bake according to the time and temperature specified on the cake mix box. Once done, remove from the oven and allow the cake to cool completely in the pan on a cooling rack.
  3. Reduce Dr Pepper for Frosting: In a medium saucepan over medium-high heat, simmer ½ cup Dr Pepper for about 15 minutes until it reduces and thickens slightly, intensifying the flavor.
  4. Add Cocoa Powder: Stir in the ½ cup unsweetened cocoa powder into the reduced Dr Pepper until fully dissolved to create a rich chocolate base for the frosting.
  5. Melt Butter: Add the ½ cup (1 stick) unsalted butter to the cocoa mixture and stir continuously until melted and combined. Remove the pan from heat and allow the mixture to cool for about 10 minutes.
  6. Combine with Sugar and Vanilla: Gradually stir in the 4 cups sifted powdered sugar into the cooled butter mixture, blending well after each addition until the frosting is smooth and glossy. Mix in 1 teaspoon vanilla extract. If desired, fold in the optional ½ cup chopped walnuts or pecans for texture.
  7. Frost the Cake: Pour the warm frosting evenly over the cooled cake surface. The heat will cause the frosting to spread and then firm up, creating a shiny shell coating.
  8. Serve: Once the frosting has set, cut the cake into squares. Serve each slice with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence and enjoy!

Notes

  • Substituting Dr Pepper for water in the cake batter adds a unique caramel and fruity flavor to the cake.
  • Ensure the cake is fully cooled before frosting to prevent the frosting from melting excessively.
  • The frosting will harden to form a shell; if you prefer a softer frosting, serve the cake shortly after applying the icing.
  • Chopped walnuts or pecans are optional but add great texture and flavor.
  • This cake pairs wonderfully with whipped cream or vanilla ice cream for a delicious dessert experience.
