Ingredients

Pistachio Ice Cream

  • 13.5 oz can of coconut cream (solid parts only)
  • 1/2 cup coconut milk
  • 1/2 cup pistachio cream
  • 1 tsp vanilla extract
  • 1/4 cup coconut sugar

Pistachio Kataifi

  • 1 cup kataifi
  • 2 tsp oil
  • 1/4 cup pistachio cream

Chocolate Coating

  • 1 cup chocolate (melted)
  • 3 tsp coconut oil
  • Chopped pistachios (for garnish)


Instructions

  1. Prepare the Ice Cream Mixture: Blend the solid coconut cream, coconut milk, pistachio cream, vanilla extract, and coconut sugar until the mixture is smooth and creamy. This forms the base of your pistachio ice cream bars.
  2. Freeze Ice Cream Bars: Pour the blended mixture into ice cream bar molds and place them in the freezer for about 2 hours or until they are mostly set but still pliable for inserting the filling.
  3. Toast Kataifi: While the bars freeze, heat a skillet over medium heat, add oil, and toast the kataifi, stirring constantly until golden brown and crispy. This prevents burning and ensures a perfect crunchy texture.
  4. Add Pistachio Cream to Kataifi: Remove the toasted kataifi from heat and mix in the pistachio cream to create a sticky, flavorful filling.
  5. Fill Ice Cream Bars: Take the semi-frozen ice cream bars out of the molds, spoon the pistachio kataifi mixture into the center of each bar and smooth it evenly to incorporate the crunchy filling.
