Ingredients

Crust

  • 19.1 oz Oreos (regular stuffed, crushed and divided)

Filling

  • 8 oz cream cheese (softened)
  • 8 Tbsp salted butter (softened)
  • 1 cup powdered sugar (aka icing sugar or confectioners sugar)
  • 1 tsp vanilla extract
  • 8 oz Cool Whip (thawed)
  • 6.8 oz instant vanilla pudding (2 – 3.4 oz boxes)
  • 3 cups milk (cold)

Topping

  • 1/2 cup shredded coconut
  • 15 drops green food coloring (or to desired color)
  • 9 Bunny Peeps (9-12 peeps)
  • 20-25 mini candy eggs (Cadbury, M&M, or Hershey’s eggs)


Instructions

  1. Crush Oreos: Add Oreos, including the filling, to a food processor and blend until they form a fine crumb. Alternatively, place Oreos in a large zip-top bag and crush them using a rolling pin.
  2. Prepare crust base: Set aside about one-third of the Oreo crumbs (around 9-10 cookies worth) for later topping. Press the remaining Oreo crumbs evenly into the bottom of a 13×9 inch pan to create the crust.
  3. Make cream cheese mixture: Using a hand mixer, beat the softened butter and cream cheese together until smooth and creamy, about 25 to 45 seconds.
  4. Add sugar and flavor: Add the powdered sugar and vanilla extract to the cream cheese mixture and mix on low speed until combined.
  5. Incorporate Cool Whip: Gently fold the Cool Whip into the cream cheese mixture using a rubber spatula until just combined.
  6. Prepare pudding mixture: In a separate bowl, whisk together the cold milk and instant vanilla pudding mix until smooth. Allow the pudding to rest in the refrigerator for about 10 minutes to set slightly.
  7. Combine mixtures: Fold the cream cheese mixture into the slightly thickened pudding mixture until well blended.
  8. Assemble cake layers: Pour the combined pudding mixture over the Oreo crust in the pan, spreading gently and evenly.
  9. Add Oreo topping: Sprinkle the reserved Oreo crumbs evenly over the top of the pudding layer.
  10. Chill: Cover the cake and refrigerate for at least 4 hours, or preferably overnight, to allow it to set fully.
  11. Make green coconut ‘grass’: Mix the shredded coconut with green food coloring until the color is evenly absorbed to resemble grass.
  12. Decorate: Sprinkle the green coconut grass over the top of the cake. Gently press the Bunny Peeps upright into the cake surface.
  13. Add candy eggs: Scatter mini candy eggs around the Peeps and fill any empty spaces on the cake surface for a festive look.

  • The cake must be refrigerated for at least 4 hours for best texture and flavor.
  • Using regular Oreos with filling adds sweetness and moisture; do not remove the cream filling before crushing.
