Ingredients
Main Ingredients
- 1/2 cup unsalted butter
- 20 oz mini marshmallows (approximately 2 bags)
- 1/2 tsp salt
- 2 tsp pure vanilla extract
- 9 oz Rice Krispies cereal
- 3 cups unsweetened coconut shreds
- Gel food coloring (your choice of colors)
- 1 1/2 cup Nutella hazelnut spread
- 108 mini Cadbury eggs
Instructions
- Melt Butter and Marshmallows: Heat a large pot over low heat, then add the butter and salt, melting them together quietly without burning.
- Add Marshmallows: Once the butter has melted, add 1 1/2 bags of the mini marshmallows to the pot, heating gently while stirring constantly until fully melted and smooth.
- Add Vanilla and Salt: Remove the pot from heat and stir in the vanilla extract and additional salt for flavor balance into the marshmallow mixture.
- Mix in Half the Cereal: Add roughly half of the Rice Krispies cereal and gently mix with a rubber spatula ensuring all pieces are evenly coated with the marshmallow mixture.
- Incorporate Remaining Cereal and Marshmallows: Fold in the remaining cereal and marshmallows carefully until everything is fully combined and coated.
- Prepare Muffin Tins: Lightly grease two 12-cup muffin tins with non-stick cooking spray to prevent the nests from sticking.
- Form Nests: Scoop 3-4 tablespoons of the Rice Krispies mixture and use your hands to press into the muffin tin cups, molding them to form nests with an indentation in the center for the filling.
- Let Nests Set: Allow the nests to sit for 30 minutes so they can firm up and hold their shape before continuing.
- Color the Coconut: Place shredded coconut into zipper bags, add 1-3 drops of gel food coloring depending on desired intensity, then seal and massage the bag to evenly dye the coconut. For multi-colored nests, split the coconut into separate bags with different colors.
- Add Nutella Filling: Once nests have set, add about 1 tablespoon of Nutella into the indentation of each nest as the creamy base.
- Top with Colored Coconut and Eggs: Sprinkle the colored coconut shreds over the Nutella, then carefully place three mini Cadbury eggs on top as decoration.
- Remove and Serve: Use a small silicone spatula or butter knife to carefully lift the nests from the muffin tins, then serve and enjoy these festive treats!
Notes
- Lightly greasing muffin tins is essential to easily remove the nests once set.
- Gel food coloring works best for vibrant coconut colors without adding too much moisture.
- You can customize nest colors by using different food coloring combinations.
- Press the cereal mixture gently to avoid crushing the crispy texture.
- Store leftover nests in an airtight container to keep them fresh.
