Instructions
- Make fajita seasoning: In a small mixing bowl, combine chili powder, ground cumin, garlic powder, paprika, oregano, kosher salt, and ground black pepper. Stir well to blend the spices into a uniform seasoning mix.
- Season the chicken: Generously sprinkle the fajita seasoning on both sides of the chicken breasts. Use your fingers to press the seasoning into the chicken so it adheres well for maximum flavor.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Place the seasoned chicken breasts in the skillet and sear them for about 7 to 8 minutes on each side, or until fully cooked and golden brown on the outside.
- Slice the veggies: While the chicken cooks, thinly slice the bell peppers and onion to prepare for sautéing.
- Sauté the vegetables: Remove the cooked chicken to a plate and let it rest. In the same skillet, add the sliced bell peppers and onions over medium heat. Cook for 4 to 5 minutes, stirring frequently until the vegetables are tender-crisp and slightly caramelized.
- Slice the chicken: When the vegetables are nearly done, slice the rested chicken breasts into strips. For thinner pieces, you can halve the strips once more.
- Combine and finish: Add the sliced chicken back into the skillet with the sautéed peppers and onions. Squeeze fresh lime juice over the mixture and stir everything together to combine and heat through.
