Marinade & Seasonings

  • 16-18 Ounces Bottle BBQ Sauce (Stubbs or New Primal recommended)
  • 2 Teaspoons Dijon Mustard
  • 2 Teaspoons Smoked Paprika
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • ½ Teaspoon Salt
  • ½ Teaspoon Ground Black Pepper
  • Additional salt and pepper for seasoning the roast


Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (163°C) to prepare for slow roasting the chuck roast.
  2. Prepare the Marinade: In a medium bowl, whisk together the BBQ sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, and black pepper until smooth and fully combined, creating a flavorful marinade to coat the meat.
  3. Season and Coat the Roast: Pat the chuck roast dry with paper towels, then season both sides generously with additional salt and pepper. Place the roast into a Dutch oven, pour the marinade over it, and flip the meat a few times to ensure it’s evenly coated on all sides.
  4. Slow Cook the Chuck Roast: Cover the Dutch oven with its lid and transfer it to the preheated oven. Allow the roast to cook slowly for 3½ to 4 hours until the meat becomes tender and easy to shred.
  5. Shred the Meat: At the 3½-hour mark, carefully remove the Dutch oven from the oven. Use two forks to pull the meat apart. If it does not shred easily, return it to the oven for an additional 30 minutes and check again.
  6. Toss with Cooking Juices: Once the chuck roast is fully tender and shredded, toss it thoroughly with the cooking juices in the Dutch oven so every bite is coated in rich flavor.
  7. Optional Broil for Crispy Edges: For caramelized, crispy edges, turn the oven broiler on high and place the uncovered Dutch oven back into the oven for 3–4 minutes. Watch closely to prevent burning.
