Ingredients

Protein and Oil

  • 2 teaspoons sesame oil
  • 1 pound lean ground beef
  • 2 eggs, whisked

Sauces and Seasonings

  • 4 tablespoons soy sauce or tamari, divided
  • 2 teaspoons honey
  • Salt, pepper, and additional soy sauce to taste

  • 3 tablespoons butter or avocado oil, divided

Vegetables

  • 1/2 small white onion, small diced
  • 2 large carrots, small diced
  • 4 green onions, thinly sliced
  • 3/4 cup frozen green peas
  • 2 teaspoons minced garlic

  • 4 cups cooked and cooled jasmine rice (preferably day-old)


Instructions

  1. Cook the Beef: Heat sesame oil in a large skillet or wok over medium-high heat. Add the lean ground beef, breaking it up as it cooks. Season lightly with salt and pepper. Once fully browned and cooked through, drain any excess grease. Stir in 2 tablespoons soy sauce and honey, then simmer for 2-3 minutes until the sauce is absorbed. Remove the beef from the pan and set aside.
  2. Scramble the Eggs: Lower heat to medium and add 1 tablespoon of butter or avocado oil to the skillet. Pour in the whisked eggs and gently scramble them until just set but still moist. Remove the eggs from the pan and set aside with the beef.
  3. Sauté the Vegetables: Add another tablespoon of butter or oil to the pan. Add the diced onion and carrots, cooking for 3-4 minutes until softened but not browned.
  4. Fry the Rice: Add the last tablespoon of butter along with the green onions, frozen peas, minced garlic, and cooked jasmine rice to the skillet. Stir to combine and cook for 3-5 minutes, stirring occasionally, allowing the rice to heat through and start to fry slightly.
  5. Combine Ingredients and Finish: Return the cooked beef and scrambled eggs to the skillet with the rice and vegetables. Pour in the remaining 2 tablespoons soy sauce and toss everything together thoroughly. Heat through and taste, adjusting seasoning with additional soy sauce, salt, and pepper if desired. Serve warm.

  • For best results, use day-old jasmine rice; freshly cooked rice tends to be too soft and sticky.
